These beans are about 6-7 inches long and are plump and moist and filled with seeds (see photo 2, where they're all over my fingers just from picking up a bean!).

I'm a pastry chef and I go through a lot of these things, so yours will be very fresh. However, they keep for ages, so there's no rush to use them quickly. If properly stored (airtight container + dark cupboard), they should last a year. The worst that will happen is they'll get dried out and lose a little of their flavor, but they will still be usable, and will still enhance your baking.


Vanilla beans will improve the flavor of virtually any homemade dessert. They're super easy to work with - slice in half the long way and scrape out the tiny seeds inside. The seeds will add flavor to cakes, frostings, cheesecakes, custards, ice creams, etc. The bean itself can be steeped in milk or cream, or you can cover it with any kind of sugar to make lovely vanilla sugar for your coffee, or you can cover it with vodka in a closed container, and in a few weeks you will have insanely good homemade vanilla extract.
