Ahhh...the power of the pepper! We had dear friends over a few years back and when they were getting up to leave for the night I sought out some gifts to give. I gathered some preserves I had recently made which included the pickled peppers and gave them as parting presents. A week later, my husband received a call and was asked if it would be possible to get some more pickled peppers; they were a hit. Absolutely! It was then that we found out that in all of our friend's life, peppers were not something he ate. Didn't like them he said. Now he grills peppers, roasts peppers, pickles peppers, anyway you can do peppers! A pepper convert from these preserves? Who is to say. Ahhh yes...the power of the pepper!

Now these sweet pickled peppers are an absolute must for your lunch sandwich. The bell pepper plants shine for us in august and september and we grow both the sweet red and green bell peppers for stuffing, freezing and for pickling. This recipe is a favorite since it provides a sweet old fashioned taste remembered from childhood. All the vegetables used are grown organically and with the abundance of rain we have had this summer, the peppers are especially thick walled and sweet. It is a simple but wonderful recipe.
