Spaghetti Squash is a great low calorie/carb alternative to pasta & a fun way to eat those veggies! Try it on the kiddies just don't tell 'em & watch them gobble it up! It is also suitable for those intolerant to gluten! Imagine how happy you can make your guests when serving up a plate of healthy Spaghetti Squash!

There are two basic ways to cook up your squash (this works for other squash as well). We cut it in half, & scoop out the seeds & "slimy stuff" - think cleaning a pumpkin for Halloween - Next we put it in a baking dish with some water & bake it for about an hour at 350-400 degrees F. It can take shorter or longer depending on how big the squash is & how hot you have your oven. The second way is to poke lots of holes into the squash with a fork. Fill up a pot big enough to hold the squash with water & boil it for about an hour. Next if baked, cool it enough to handle & use a fork to release the strands by scraping along the insides of the squash in one direction. If boiled, let it cool enough to handle, open it up & do the same with a fork. Add your favorite pasta toppings & dinner is served!

Our pictured Spaghetti Squash was pulled out of cold storage for their photo shot & we didn't "spruce them up" please forgive them for their lack luster appearance. This shows you how well they hold up in proper storage. We are lucky to have fresh squash in winter! Yum!

90-100 days. Warm season crop - plant 2 - 4 weeks after last chance of Spring frost. With 70-90 degree soil temps. To start inside: 2-3 weeks before last frost. Sow in peat pots for direct planting.

Days to emerge: 3-7
Seed depth: 1/2-1"
Seed spacing: 3-4 seeds per hill
Hill spacing: 3' -4'
Thinning: when several leaves, thin to 2 per hill.
