We recommend storing vanilla beans in a tightly sealed airtight container, preferably a glass jar. Keep the vanilla away from heat and in a dark place such as a pantry or dark cabinet. Do not refrigerate the beans because this can cause them to mold. 

Vanilla beans will keep for at least a year when properly stored, and can last more than two years in ideal conditions.

Grade A vanilla beans can also be called gourmet or premium These beans are oily and moist. These beans may have vanillin crystals on the outside and have a 30% – 35% moisture content. Grade A beans can vary in size between 6 to 8 inches. Grade A vanilla is visually attractive and if often a feature ingredient in gourmet cuisine. 30% – 35% moisture content.

Grade B vanilla beans can also be called extract beans. This vanilla bean is less moist and less attractive and has 15% – 25% moisture content. Grade B beans are dry (not likely to have be as oily) and between 6-7 inches.

Tahitensis vanilla is a result of the cross-pollination of two other plants: Vanilla Planifolia (the original Mexican variety, now most commonly associated with Madagascar) and a species called Vanilla Odorata.

Tahitensis vanilla has an incredibly subtle and complex flavor profile. And it’s infinitely more versatile than the Madagascan/Bourbon variety. It is the go-to variety for Michelin Star Chefs and Pastry Masters.

Making Vanilla Extract
Making vanilla extract with rum or bourbon is a great option if you’re after a more smokey or sweet taste, respectively. But we’ve experimented on your behalf and found that vodka is king when it comes to making vanilla extract. Only vodka has a clean, complementary taste that allows the vanilla flavor to shine through. You don’t need the top shelf vodka either; even the cheapest brand will do. Don’t worry if you don’t like the taste of vodka because the alcohol will burn off when cooking/baking.
