Here's an offering for our lactose intolerant, those that are moving away from dairy and vegan friends. This offering is a REAL ADVENTURE!

While thumbing through a Navajo recipe book, I kept reading about this "Juniper Ash" that is added to many of their blue corn-meal dishes. After researching this ash, we learned that Juniper Ash has long been consumed as a calcium supplement for the many lactose-intolerant Native American peoples. This was one of the articles I read:

I then began asking my Navajo friends if they have ever heard of this and most stated that this is still the way they eat their blue corn meal dishes. AMAZING!! We had to try for ourselves. Check out our You Tube video where we taste compare blue corn cakes with different blue corns and with/without ash to determine what we liked the best:

It's not polished but I think we gave good information. (And, no, we did not get sick)

Please try it for yourself. It adds a smokey flavor to the dishes nixtamalizes the blue corn and is actually quite tasty. We do offer a recipe for the traditional Blue Corn Mush in our recipe tab to get you started on your culinary ash adventure.

I will warn you (as in the video) we know this is safe from our Juniper trees but have no idea if the same is true for other species of junipers or trees in general. We are also offering blue corn meal separately if you would like to try it and don't have it locally:

I'm always looking for non-dairy sources of calcium, and a chef friend recommended culinary ash. It's hard to find, so I was thrilled to discover Lighthouse Hill.
