These authentic, very large, heavy and genuine molcajetes are made for us for this very special package. Made by Mexican Americans in Texas! Use this authentic Mexican Salsa or Guacamole Maker to get the authentic Mexican Restaurant results. Use the included Guacamole recipe to create that same table-side experience and taste from authentic Mexican Restaurants. Adjust for your personal tastes AFTER making.
Used for thousands of years, the molcajete (mol-ka-ha'-tay) is Meso-America's mortar and pestle and their solution for grinding and mixing grains, spices, herbs and other foods as well as making entire dishes or salsa in. Like many natural materials, the molcajete requires initial curing and seasoning and gets better with use! Instructions included for curing. Seasoning of the set is all about YOU! We rubbed garlic and Himalayan Salt on ours after curing to season.

This set is the AUTHENTIC lava rock bowl used in Traditional Mexican Restaurants to make salsa or table side prepared quacamole. When we gave cooking demonstrations in our shop in Texas, customers always asked for my guacamole recipe. I will include this in the kit. The kit will also include 8 oz of our specialty blend Himalayan coarse grind salt to aid in curing AND to serve as your first grind project! Instructions for curing your molcajete using the traditional Mexican method are included, as are our more modern and hygienic methods using our Himalayan Salt. Himalayan Salt is antimicrobial, antibacterial and antifungal, so using this step will add an additional layer of protection. Please see instructions for complete details.

Molcajetes can also be used to extreme temperatures (they are after all, carved from lava rock!) One very popular dish in the Yucatan peninsula is to heat the molcajete to 500° or hotter and take sliced onions, shrimp, cilantro and fresh tomatoes and flash cook. Add cheddar, Monterey Jack, Colby Jack (or other!) cheese chunks and broil until melted. Remove and stir in salsa to taste. Serve with tortilla chips or warm tortillas. You ARE welcome! I will include this recipe, the guacamole recipe as well!

Genuine molcajetes are very heavy. This listing is for our 8" class, which measures 7.75-8.5" diameter and approximately 5-6" high. The tejolote (tay-ho-low'-tay - the pestle like piece) is approximately 3-4" long. Each set weighs approximately 9-11 lbs. Please note: these are made from ACTUAL lava rock, also known as basalt. Characteristics of this rock are pores of varying sizes as well as inclusions. Inclusions can be different colored bits of rock as well as other volcanic properties. We have seen sections that have no pores looking quite smooth, inclusions of obsidian, feldspar, pyroxene and sandstone as well as heavy sand sediment that have settled into the pores. While not all of these attributes will be seen in every set, please expect to see at least some! These are all considered somewhat normal and of course, safe. Color can range from light gray to charcoal. All will deepen in color after curing and with use. The texture of a well used molcajete is smoother, edges are softer and there is often a slight sheen, all dependent upon use and original shape. The way a well-used molcajete ages, is the reason these are highly treasured when passed down from generation to generation.

Great to make and serve your guacamole, queso, salsa, and specialty dishes in. Bring a slice of Mexico to your table. These are NOT the cheap cement ones that are often peddled at tourist markets in Mexico and along the border! Cement has potentially toxic ingredients and should absolutely not be used in this manner. You will notice a strong mineral and even sulphur scent during the curing process. Again, this is all perfectly normal and safe.
