DIRECTIONS:

Making red-eye gravy has never been easier.

1. Simply pan fry up the country ham as usual. If you're not a big fan of country ham, use bacon slices instead for a squealing good bacon gravy.
2. Sprinkle 1 heaping teaspoon of Red Eye Gravy Mix.
3. Stir in 1 cup of hot water.
4. De-glaze the skillet or frying plan, scraping all the ham or bacon bits and pieces loose.
5. Boil mixture for a few minutes while ingredients combine and gravy reduces down. Spoon over ham slices, biscuits and/or grits. Yummy! Delicious over steak too.

Why is it called Red Eye Gravy?

Traditionally a southern treat, the "red eye" comes from the gravy's appearance. While the coffee and reddish bits and pieces of ham and bacon sink to the bottom of the serving bowl and the grease floats on top, it gives the appears of an eye. Red Eye Gravy looks like reddish brown gravy and is sometimes referred to as bird-eye gravy, coffee gravy, poor man's gravy or red ham gravy.
