Only very mildly "sourdoughish", this live bread starter is used to make all types of artisan bread products. This is a "potato" starter. It is "clean", less thick and sticky than the flour starters I've used in the past. And it creates long gluten strands that result in the "holey" crumb unique to artisan-style breads.

In addition to raised bread, it makes up into delicious pizza and focaccia. It won't go "green" or get too sour. It can even be used to make homemade wine! It can be used to make all types of delicious fruit and grape wines, meads, and hard ciders.

If kept on the counter top in your kitchen it will need to be fed about once a week. If housed in the refrigerator it likes a feeding every two or three weeks.

Feeding it? Simple. It likes sugar, water, and potato flakes (or, the cooled water left from cooking potatoes or gnocchi and sugar). That's all!

This artisan bread starter has history! It has been passed down from grandmothers to granddaughters and daughters, from friend to friend, and neighbor to neighbor down through the years. Its exact age and place of origin is unknown, "lost" in the yeasty corridors of time and baking. Legend has it that this starter accompanied pioneer women across the plains. Perhaps.

The fact that it is a potato starter may (or may not) indicate that it originated in a place where potatoes were plentiful in the diet...Germany, Russia, Poland, Ireland, a province in Italy, a country villa in Normandy or Provence...?
