Psalms 22:1
This sauce has a simple vinegar, carrot, and habanero base to compliment the sweetness and heat of the ghost peppers or bhut jolokias and naga murich peppers- currently one of the hottest varieties grown in the world. My farmer says these peppers rate just under 1.6 million on the Scoville Scale. Compare that to the 3,000 the average jalapeño rates.
Do not drink this sauce straight. Do not feed it to young children or animals. When cooking, add one drop at a time. Too much will ruin your food, but the right amount will make it exquisite. Also, note that the heat takes a few seconds to register. The first taste will be a tangy vinegar and subtle fruitiness, then the pepper's unparallelled burn comes. Shake well before using.

She’s Ain't Pretty; She’s SMOKIN' Hot
This is our version of a chipotle sauce only we cheated a little. The fresh peppers are roasted along with onions and lots of garlic while the smoky flavor comes from Stuarto’s Durango pepper and Applewood sea salt and just a hint of natural mesquite smoke. You can poor this thick jalapeño puree over eggs or bake it with chicken or add it to your nachos and dip. It's also particularly tasty with Latin food- think tilapia fish tacos. The possibilities are endless.

Devil in the Details:
While there are no artificial ingredients or additives whatsoever, all sauces are shelf stable, but I suggest keeping them in the fridge to protect the flavor. The sauces are not only vegan but gluten, soy*, and peanut free (though I cannot guarantee that the kitchen does not contain traces of these allergens). All hot sauces are made from organic farm fresh peppers in a sanitary environment. These aren’t something I just cooked up in my kitchen one day for my friends. Well, they are, but then I had to pay the state of KY much money to send a food inspector out to certify the kitchen I cook in (a commercial space provided by the university), myself (certified food service manager), and my process (tedious pepper pulping, constant fumigation, hot-fill bottling, and bleach cleaning). Rest assured that each bottle has been painstakingly prepared with the utmost care and concern towards quality and safety.
