Pear jam came as a surprise to me. I never even knew of its existence until I brought home a spontaneous purchase of locally grown bartletts (note, while I make all of the products for sale at a licensed commercial kitchen, I practice at home). Thinking I was going to make pear butter, I sat down with one of my favorite jam books to figure out my technique. Low and behold, instead I found a recipe for pear jam. "Weird" I thought, and then set about making it to see what it was like.

Dee. Lish. Us!!!!! So good, all crunchy and smooth, with just enough spread to go on toast easily, but lots of body. I originally cooked it with cardamom on a whim, and it stuck. After the first batch I started adding sugared ginger to it, and it really popped! I now swear by pear jam, and am still trying to tear myself away from it long enough to get around to making pear butter, which I hear is quite delicious as well. SO. GOOD!
