Millet Bread is good for people on a limited diet, but it is also tasty and a good wholesome bread.

This Millet Bread recipe makes dough that can be worked and shaped into rolls and plaits.

So many gluten free breads are no fun to eat. They promise much but deliver little!
When my first Chia & Poppy Seed Bread came out of the oven I was so excited to have baked bread that had a real crust, smelled like bread, tasted like bread and had the texture of a good wholemeal bread. Since then I have been working at developing other breads and baked goods that use a range of gluten free flour mixes. I develop all my own flour mixes.

I used to bake wheaten bread and I loved baking for friends and family. When some of us had to keep away from gluten we missed home made bread. Many of the available gluten free bread mixes and recipes resulted in loaves that gave no joy! I set myself the challenge of creating a range of breads and other foods that were a joy to eat, and that anyone would find tasty and pleasant to eat. All my recipes have to pass the taste tests set by my children and my wife. Anything that fails is consigned to history!

All my recipes use ingredients that are readily available in supermarkets and health food stores.

This bread can be used for 2 or 3 days without freezing, and without losing its taste or texture; but who would want to leave it alone for that long?

This millet bread is even better than gluten bread!!! It's so simple to make, I've made it twice now. My favorite way is to do rolls with it and make little sandwiches. We eat one making within a week, but I know it stays good that long, I keep mine in the fridge. You will be so happy you bought this recipe. I'm going to try pizza dough next :D

This is really good delicious bread, esp for gluten free. delicate to get out, make sure sure grease and flour the pan well. My first pan was a small glass one, too small and it overflowed the sides, I cut those hanging edge off while it was baking and it sunk. 2nd try in a bigger pan was better, but it was yeasty tasting, maybe could have cooked longer. I love the taste, very yummy, this is my first attempt at bread, I will give it a 3rd try.

I had a fun working with this recipe, and have gotten more successful with with each attempt. It's great to be baking again with something that can't hurt me AND tastes great. Speaking of which, the first time it tried the recipe the bread came out with a beautiful scent and soft crumb but seemed really salty. I was upset, and then my mother in law pointed out that I probably cut too soon and that I should have let it rest longer. She was right and the next morning all is well! Can't wait for his book!!! <3
