This is my vegan version of "Ragu' alla Bolognese", the classic meat sauce from the northern Italian province of Bologna. It is typically served with tagliatelle, a flat egg pasta that many Italian mothers still make at home. ( Yes, the pasta on the photo was homemade by Pipsqueek.) This meatless ragu' is made with vegetable proteins, tomatoes, carrots, celery and fresh herbs. "Ragu alla Bolognese" is delicious on any type of pasta, or on polenta as the Italians do.

From the food dictionary at Epicurious.com..."Though different than the French RAGOUT, both are derived from the verb ragoûter , which means "to stimulate the appetite."

"Ragu' alla Bolognese" will definitely stimulate yours!

All our sauces are handmade and prepared in small batches and cooked slowly for hours allowing all the ingredients to blend perfectly.

All Pipsqueek food preparations are vegetarian/vegan sentient food (no onions and garlic) and are based on over thirty years of personal exploration. 
Pipsqueek rejects the thought that  vegetarian food is tasteless or "less than" ...indeed,it is quite the opposite. Using only what nature has provided each delicious item presented will reveal another food reality....(Example: in sound ,think the difference between monaural and stereo/ surround sound).

In years past we often served wonderful meals to our friends without comment only to reveal at the end  that it was a vegetarian presentation. It was their  reaction to the meals (and constant requests
for jars to take home) that finally pushed us into the Pipsqueek project.  

All produce we pick from a local farm and prepared from scratch within 24 hours using only the highest quality ingredients ...no canned or frozen anything , ever. This  food is simply delicious .....When eating it is best to concentrate on the tasty food itself and eliminate any preconceived ideas regarding the word  "vegetarian"...it won't apply here . After a few Pipsqueek meals the word vegetarian will simply mean another tasty experience.

It is not our desire nor intention to create a food production monster, which is completely against the concept of ‘fatta in casa’ (home made).Items shipped to your home are taken from our pantry....you eat what we eat. Everything is picked in season,prepared within 24 hours and placed
in the pantry.  My objective  is to share Pipsqueek products with those who can still appreciate the quality and care given to the preparation of these foods. There is a uniformity in commercially prepared foods not found in home cooking.The taste you get  may vary from jar to jar but  every item you open will be a delightful and delicious experience.

Long before commercially made "factory" food our grand and great grandparents ate farm grown, hand made food stuffs. While there have been tremendous improvements in life it is difficult to argue that today's corporate food factories create  food that is more healthy and tasty than that of previous generations....'nuff said.  

Pipsqueek  foods should be eaten SLOWLY, take your time, SAVOR the flavors and enjoy the moment. 

The Italians have a proverb for any  situation ….here's one of my
favorites:
                "Nella piccola pignatta sta spesso il buon brodo"
translation 
"Oftentimes  the best soup is cooked in the small pot".
