Amaranth Burgundy is an easy to grow annual and a nutritional food source. All parts of the Amaranth Burgundy plant are useful; the roots, herbage, and seeds are edible at all stages, it makes a wonderful backdrop in the garden, and if you don't eat all of it, it breaks down into a good compost mulch. Amaranth is a winner all round!

Sprouting Amaranth seeds are a delicious addition to salads and sandwiches. When toasted, Amaranth seeds will pop like popcorn. The seeds can also be ground into flour and used in breads, noodles, and generally as a flour substitute. The leaves and stem can be used like greens and taste like delicate spinach.

Amaranth is an excellent source of protein, fiber and essential amino acids. Once a staple food source for the Incas & Aztecs Amaranth is now used as a cereal grain in Africa & South America.

Plant in spring after danger of frost in a sunny position: Sow seeds 1/4" to 1/2" deep into finely dug soil with organic mulch. Keep moist until germination (not wet) and water as required once established. Amaranth is relatively drought tolerant, pest and disease free.
