Choux Puffs that melt in your mouth and taste just right - and yet they are gluten free!
They are ideal for to share as a special treat with fine coffee, as chocolate eclairs, or build a centerpiece of profiteroles for a special meal!

I developed this recipe to share with my wife and daughter, as a special treat for Mother's Day. These Choux Puffs are made with a mix of tapioca and rice flours. As you can see from the photographs, they are light and have just the right texture. They are crisp on the outside and lovely, moist buttery layers inside. The recipe will make 12 generous Choux Puffs, or many more if you want to make a centerpiece with profiteroles.

This recipe provides instructions to make the Choux Puffs, it does not give directions for fillings or toppings.

All my recipes use ingredients that are readily available in supermarkets and health food stores.
