Vegetable Fermentation Crocks, handmade in 2012 by Sarah Kersten in Berkeley California, featuring a Water Seal and custom weights.

This Ceramic Vegetable Culturing Jar is specifically designed to make it easy for you to make live culture vegetables at home, on your kitchen counter. Made by a skilled craftsperson who is passionate about the fermentation process and tradition, the jar is intentionally created to be an aesthetically inspiring addition to your life while also being extremely durable, foodsafe, and reliable.

These jars have an unusual lid design that has origins in ancient china. The lid of the jar sits in a well of water while the vegetables ferment. This "Water Seal" feature streamlines the fermentation process by keeping outside oxygen out of the jar. Without outside oxygen, mold or other contaminants are not able to grow in or on the fermenting foods. The jars help you make perfect sauerkraut, kimchee, or other fermented foods every time, without needing to periodically scrape layers of mold off of the surface of the fermenting vegetables. Fruit flies can't get in either!

A second great benefit of using Counter Culture Pottery Vegetable Culturing Jars is the containment of the smell of the fermenting vegetables. The water seal feature stops air circulation, and almost entirely eliminates the pungent odors of the fermenting foods (until the jar is opened).

The jars are made out of high fired, porcelaneous stoneware. I have personally been testing them continuously in my kitchen by crafting a variety of fermented foods for a year and a half, and I have not seen a single sign of change or wear from use. The inside of the jar is purposely glazed to be resistant to corrosion, and it is my intention that every jar will have an extensive lifetime of regular use in your home.

Each jar holds one gallon. Each jar comes with a set of weights to keep vegetables submerged below brine water. Each jar comes with a ten page booklet about the jar, proper usage, and some recipe ideas.
