These are one of my favorite types of jobs. You can really get creative with these. The paper I like to use best is really thick watercolor paper. It is a diamond white, so works for white or ivory based weddings. It is very sturdy and can support the heavy handling it will encounter on your wedding day.

Lines for your guests are penciled (you get nice neat signatures, and no extra lines as you erase all of the lines after the wedding), or no lines for a more light hearted haphazard feel.
