He interned for 6 months at Alice Water's restaurant Chez Panisse in Berkeley, California and assisted Chef Greweling with research and recipes as he worked on his third book: "Chocolates and Confections: Formula, Theory, and Technique for the Artisan Confectioner Second Edition(2013)".
