At BOKOLETTE, every batch is handmade with an obsessive attention to detail. Each macaron is made with only the best ingredients: Californian almonds, fresh egg whites, & pure cane sugar. We use only Callebaut coveture chocolate for our ganches, and real, fresh seasonal fruit. Specializing in unique, exotic flavors and avant-garde ingredient pairings, BOKOLETTE seeks to redefine the art of the macaron.

Not to be confused with the common coconut "macaroon", the Parisian, or French MACARON is a delicate French pastry made from egg whites, almonds, and sugar. They come sandwiched together with buttercream, ganache, custard, or jams. The perfect macaron takes time: it is an extremely tedious process of grinding almonds, aging egg whites, and very carefully coaxing these ingredients into a product with a crispy thin shell, cotton-soft interior, and a macaron's elusive trademark ruffled "foot".
