The taste and freshness tells the story

Build up your own spice, herb and seasoning pantry by purchasing a few at a time and being sure to not store them near the stove or a sunny window. Heat and sun wreak havoc with the color and freshness of your herbs and spices. I keep them on a shelf away from the stove and dishwasher and away from the window. This will add many months to your shelf life of your herbs and spices.

I keep a set of measuring spoons on a cup hook under the shelf and my grinder on the shelf so I can grind my seeds and pods fresh just before I add them to a recipe. Nothing like fresh peppercorns or sea salt ground together to give an extra punch to your recipe.
You can use your coffee bean grinder if you do not have a separate extra spice grinder.
Just wipe out with a paper towel after spicing and before bean grinding.
. I preview and blend all the dips and special seasonings by hand in my own lab

About

Catering and cooking for others is a time consuming and rewarding business.

Having been brought up in New England with 6 brothers and sisters and a mother who hated cooking, I naturally gravitated to learning to cook after high school. I learned early to follow recipes exactly when making bread, cakes and baking and noticed I could add or subtract when making basic meals. Spices and herbs became a go to. Once I made a cream soup for my mother in law from 5 tins of dried veggies I had in the pantry. She raved about my cooking.

My husband and I moved to Florida and I became entranced with, biscuits and gravy, pulled pork, red beans and rice and southern fried chicken. I quickly acquired the know how to make all these tasty morsels. (You do realize I came from a house who had burnt Boston Baked Beans every Saturday)

I had a catering business and a food truck for 10 years. During that time I discovered some "secrets" of spices, baking and simple basics of cooking.

My 1/2 pound burger became a staple on my truck. I cooked 30-40 every day. A breakfast omelet of egg, ham, potatoes, onions and cheese filled those boys up till I got back with lunch.

I experimented with vegetables and made a simple spice and herb mix along with some olive oil and sprinkled it over veggies and pan roasted them. They were a big hit with people who wanted something for lunch but not too heavy. I sold bowls and bowls of them off my food truck and sold pans of them for customers to take home for dinner. They were a big hit at catering jobs, also. Since they can be served hot or just warm they are an easy item, never the same veggies twice, using what we had and always seasonal.
