1/4 cup soft unsalted butter
1/2 cup powdered sugar
1 egg (room temperature)
1 T milk (room temperature)
1/2 t. vanilla extract
1/8 t. salt
1 1/4 cups flour

Cream butter and sugar; add egg, milk and vanilla; Mix in salt and flour. Gather into a disc, wrap in plastic and refrigerate 2 hours. Roll out (using confectioners sugar instead of flour) to 1/8" to 3/16" thick. Using a heart cookie cutter, cut out and carefully transfer to a silpat mat covered sheet pan. Bake 375 degrees for 8 minutes. May sprinkle tops with sifted confectioners sugar. Makes about 30 cookies.
3/4 lb. lean beef
1/2 cup cracker meal
3/4 t. cornstarch
1 egg beaten
1/2 c. light cream
3/4 t. salt

2 T. Vegetable oil

Combine first 6 ingredients and mix lightly. Form meatballs, brown in skillet with oil; Simmer in spaghetti sauce...YUM>>>
1 cup minced onion
2 T. Olive oil
1 lb. lean ground beef
2 cloves garlic, minced
2 T. dried parsley
1 medium green pepper, chopped
(1) 28 oz. San Marzano tomatoes
(1) 6 oz tomato paste
1 1/2 cups water
2 t. salt
1/2 t. pepper
1 t. sage
1/4 t. thyme
2 bay leaves
pinch nutmeg
dash of red pepper flakes
splash of red wine

Brown beef in oil; add onions and ooo soft. Add rest of ingredients and simmer 1 1/2 hours until thick. Makes 1/2 gallon. Freezes well...

Serve with black olves and Parmesan. (note meatball recipe to follow tomorrow!)
8 firm ripe tomatoes, sliced thick
1/4 cup chopped parsley
1 clove garlic, minced
1 t. salt
1 t. sugar
1/4 t. pepper
1/4 c. olive oil
2 T. vinegar
2 t. dijon mustard (or your choice)

Combine all ingredients (except tomatoes) and shake well. Layer tomatoes in a shallow dish, covering each layer with dressing. Cover tightly and let stand at room temperature 20 minutes. Serve chilled or room temperature. YUM!!!

1/2 lb. Lean Beef
1 T olive oil
1 garlic clove, minced
1 1/2 t. salt
1/2 t. pepper
packet of Lawry's spaghetti sauce mix
6 oz. tomato paste
24 oz. water
1/2 t thyme
1/2 t. sage

8 oz medium wide noodles (cook 7-8 min and drain)

3 oz. cream cheese (soft)
1 c sour cream
1 T. dried parsley
1/2 c. Parmesan cheese, grated

2 1/2 qt. greased casserole 350 degree oven

Brown beef in skillet;add next 9 inredients and simmer 25 minutes.
Mix in bowl cream cheese, sour cream, parsley
Layer: 1/2 noodles; 1/2 sauce; 2/3 cream mixture
1/2 noodles; 1/2 sauce 1/3 cream mix in blobs on top
Sprinkle Parmesan on top and bake uncovered 25 minutes.
