Sounds great, Chelsea! When growing Lion's Mane mushrooms outside the bag, I like to tape the bag top down to keep the mushrooms from forming in the spot at the top of the bag. This reserves the fungus' energy to produce mushrooms right where you make your cut when the bag is mostly colonized, with the fungus showing visibly over almost all of the block. 85% relative humidity recommended and Don't Mist them with water because they don't need it!
