Our Background:
Back in 1999, John discovered the essence of 'authentic' coffee aficionados while traveling in Milan, Italy after he grabbed his first 'un caffe'. The pursuit of coffee excellence hasn't been the same ever since. He recently just returned back to the East Coast after a nearly 4 year bus trip with his family around North America and Central America, visiting Costa Rica, Mexico, 43 states within the Continental USA, plus most provinces in Canada on a journey to rediscover the essence of coffee culture. Visiting coffee farms, mills, cafe's, talking to roasters, attending cupping's, and even competing in 'caffeine crawls', John wishes to share his journey of coffee with you through carefully selected roasts that he handpicks.

Who are we:
We are a specialty craft coffee micro-roaster featuring premium 90+ scoring microlot coffees, ranging from coveted Panama Geishas to Royal Crown Jewels, ranging from rare varietals to new & upcoming farms with an interesting story to tell.

Why are you any Different than Brand XYZ?
We are different than most large "third-wave" roasters in that we do not focus our efforts in 'building a line in our cafe', or create a huge selections of kitschy blends...rather we aim to deliver you a simple promise...you will taste amazing coffee, that will be delivered as fresh as possible to your doorstep, and we will NEVER sacrifice profits for tradition.

What "Does" Facing West Mean?
"Growing up on the East Coast I have always had this magnetic drive to 'be' out West...call it a magnetic attraction to Mother Earth and the mountains...so once I was able to pursue this dream, I did just that...I sold everything I owned, bought a bus, and took a 4 year road trip across the continent to get lost in order to find my "true self"...everywhere i went I found myself hiking in nature and drinking 'local' coffee...now after returning back to the East Coast from my epic wanderlust journey I quickly became homesick...of 'being' out West. Specifically the Colorado Rockies and the West Coast. I decided to take my passion of coffee from that journey and manifest my own destiny...I created my very own unique coffee brand that represented my love of hiking, Mother Nature, and of course coffee. "Facing West" is my inner feeling of looking out to the West...my desire to be back in nature, hiking the trails, sitting by a campfire, staring up at the stars in my hammock, all while holding a hot cup of fresh roasted coffee wrapped between my two hands...there is nothing quite like it. With this brand I intend to move to Colorado, and open a retail cafe and roasting/cupping lab. Thank you for supporting my endeavors. This dream would be nothing with you."

How Should I Store My Coffee?

Four things kill coffee, and its 1000+ aromatic and flavor compounds:

Heat - Store in a dry, cool place.
Moisture - Dont put fresh roasted coffee in the fridge. DO put in your freezer as whole bean ONLY, especially if you plan on storing it to use in a timeframe longer than 7 days. Ground coffee loses its flavor and aroma compounds within 15 minutes, no matter where you place it.
Oxygen - Be sure to squeeze out all the air from your zip bag before putting away.
Sunlight - UV and direct sunlight are not good for roasted coffee.

Brew Guide- Part 1

Grind only what you will need to brew, and store the rest of the beans in a cool, dry place.

We follow (& highly recommend) SCAA guidelines for brewing; therefore we recommend, and prepare these roasts to follow the golden ratio of coffee weight to brew weight. (Ex. 32.5 grams (2 tablespoons) ground coffee to 500ml (a typical water bottle like Aquafina or Dasani). You may find you like a little more boldness in your cup, in which case experiment and increase your ratio to 16:1 (which is my personal favorite)

Brew Guide - Part 2

Brewed Coffee is 98.75% water. The other 1.25% is soluble plant matter aka ground coffee. So use good water. We prefer to use Third Wave Water packets with a 1 gallon DI (distilled) jug of water from the grocery store. Tap water, and even bottled water contains chlorine, fluoride, and other chemicals that kill the compounds in coffee. Distilled water has had all of its minerals stripped, and the addition of Third Wave Water packets contains the right amount of re-mineralization for your brewed coffee. Do NOT drink DI water alone without re-mineralizing it.

Brew Guide - Part 3

Grind Size is key, and owning a good grinder is more important that owning a good coffee brewer. Besides fresh roasted coffee and a good source of water, a grinder is the most important part of your equipment. Therefore select a decent 'conical' or flat burr grinder that has infinite adjustments...your coffee grind size should resemble table salt, or perhaps a little more course, but when pinched between your fingers most of it should clump up.

Roasting Schedule

Orders placed Wednesday to Saturday: will be processed and shipped out the following Monday to ensure USPS has sufficient time to deliver you fresh coffee and it doesnt sit over a long weekend.

Orders placed Sunday to Tuesday: will be processed and shipped the following day giving USPS enough time (1-3 days in most cases) to deliver your fresh roasted coffee.

Do you sell ground coffee?

We ship whole bean coffee only. Ground coffee loses the majority of its 800+ aromatic flavour compounds within 15 minutes of grinding, and stales shortly thereafter. We want to ensure the highest quality cup, and pre-grinding your order does not fall in line with our core principles of delivering fresh roasted coffee.

Did you know that an espresso can be detected as stale if the grounds are left out for more than 30 seconds?
Did you know you can 'age' the flavor of coffee by 10 days by leaving it out for 30 minutes?

What is "Roast to Order"

All coffees you are receiving from us are freshly micro-roasted to order..we don't store roasted coffee and ship from a large inventory...Orders placed before 9am Sunday thru Tuesday are roasted and shipped on the next business day to guarantee you receive freshly roasted, and rested coffee. If you order Thursday thru Saturday, we will ship on Monday to ensure you receive fresh roasted coffee.
