DOMESTIC SHIPPING

Except for Canada, shipping costs outside of the United States are just estimates, and are probably on the high side. For items over 8 ounces, the shipping rates are for Priority Mail. If you would prefer First Class International, let me know and I will determine the shipping costs. Any shipping fees charged which are more than my actual shipping costs will be refunded through PayPal.

Expanding Caramels Beyond the Ordinary

Growing up, every Christmas my mom would make pecan rolls (she still does), which consisted of a pinoche center wrapped in caramel and covered with pecans. One Christmas while I was in college, my parents decided to spend three weeks in Italy, which meant that I wouldn't be able to eat any of my Mom's pecan rolls.

I decided to try and make them myself. I had a really hard time getting the pinoche to turn out right, but I was able to make the caramel. After a few attempts, I gave up on making the pecan rolls and just started making the caramel. As I shared them with family and friends, it was easy to see that they were a big hit.

Then one day I went to a party at my sister’s house and she had made a cinnamon caramel dip for dipping apples, which I really liked (I’m a big fan of cinnamon). That is where I got the idea of adding flavors to the caramels.

This was the beginning of the great experimentation of which flavors to add to the caramels, how much flavoring to add, what to wrap the caramels in, what temperatures to cook the caramels to, and so many other small details.

Near the end of 2008, I jumped through all the hoops to get licensed with the Utah State Department of Agriculture. Luckily, Utah allows cottage industries, which permit people to use their own kitchen to make and sell food. We have a separate apartment in our basement, so I had a kitchen available for making caramels.

I started with four flavors: vanilla, cinnamon, orange, and peppermint. I opened my Etsy store, as well as doing boutique shows in model homes here in Utah. Although things started slowly, business keeps growing and the ideas keep coming. I have added six more flavors - sea salt, apple, apple cinnamon, cheesecake, coconut, and licorice. I have changed the shape of the caramels to make wrapping and unwrapping easier. I decided to sell the caramel in blocks of various sizes to save me work and to save the customers money.

My goal is to someday have my caramels available on store shelves. The biggest problem is finding a way to extend shelf life without using preservatives. I currently have caramels on the shelves of the Benson Grist Mill Country Store in Stansbury Park, Utah. This is giving me the opportunity to experiment with packaging until I find something that works.
