'holding/freezing items for a few days

I have a show on Saturday, and a lot of the items that I have listed in my shop are going to be avail. for sale there. I have only one of each item, except for one pair of earrings. I'm afraid I'll sell things at the show and then come home and find I've sold one online. I don't want to suddenly unlist all of these items, because then my shop will be empty, and I'll just have to relist the ones that haven't sold. Is there any way to hold these items? Put them in some limbo somewhere so they're saved, but not able to be purchased? the only thing I can think of is to click 'edit' on each one, so they're held until I click 'finish' in the editing process (I know this works because I did it once...accidentally...haha). Please help!
