These miniature pretzels with a layer of homemade caramel are hands-down my most popular candies. Each one contains only caramel (unsalted butter, King Syrup--akin to corn syrup, but with a richer, more complex flavor--brown sugar, pure vanilla extract, heavy cream, and kosher salt), miniature pretzels, kosher salt and semi-sweet chocolate. And yes, since you ask, I do make the caramel myself from scratch. This is then cooled and cut into pieces before being "glued" to miniature pretzels with melted semi-sweet chocolate. Once these have set, the entire thing is then hand-dipped in melted semi-sweet chocolate and dusted lightly with kosher salt and maybe some colorful jimmies. The result is an astonishing blend of sweet and salty, crunchy and chewy.

These are completely nut-free but not gluten-free (because of the pretzels). I use only Callebaut Belgian semi-sweet chocolate (52% cacao content) and Guittard American semi-sweet chocolate (55% cacao) for my chocolates. The minimum cacao content required in the United States in order to be able to sell a product as chocolate (rather than "chocolate-flavored" or "chocolatey") is 10%--a Hershey bar has an 11% cacao content.

The other ingredients I use in all my chocolates are equally high in quality: heavy cream, unsalted butter, pure vanilla extract, kosher salt, and so on. A complete list of ingredients comes with each box. Even chocolate fans who fall resolutely in the milk chocolate camp love my chocolates--the quality is so high and the taste so rich and complex that even folks who start out wrinkling up their nose at the thought of eating semi-sweet chocolate end up amazed at how much they prefer it to the more pallid American milk chocolate.

The photographs show the variety of ways in which your chocolates may be decorated--I decorate according to my whims that day. I subscribe to the French idea that we "eat with our eyes first," so my candies are beautiful, as is the packaging, from the candy box in which they're placed to the glossy sticker which seals the candy box to the sophisticated white-and-turquoise mailing label which announces to the recipient that, hey! Something really special has just arrived!

Your goodies will be prepared from scratch by me, one batch at a time, in my home kitchen in eastern Ohio. They will arrive in your hands in a beautiful white glossy box approved by the FDA for food storage safety. They will be beautifully decorated, carefully packaged and with sealed with a handsome glossy label. You can be virtuous and give the box to someone as a gift--or you can listen to the bad angel on your OTHER shoulder and sit down on the floor and start nibbling as soon as the package arrives. If you're sending the box or boxes directly to someone else, please let me know EXACTLY what you'd like the gift card to say (please be brief--the cards are very small!) and be sure to include your name for the card.

You will receive 9 to 11 pretzels (8 to 10 ozs.). These are handmade confections, not industrially-produced factory food, so numbers are approximate. Your confections will stay fresh and deliciously edible for several weeks in the box (not that you'll be able to stay away from them for that long). PLEASE DO NOT REFRIGERATE OR FREEZE!

Because I make each batch upon receiving orders (rather than in advance), I ask you to allow a full ten days from your order date until the confections are shipped to you via priority United States mail (though I usually ship MUCH faster than this). This translates to allowing two weeks from ordering to receiving. Postal insurance is not available on food items made in a home kitchen, but I've never had a problem with them arriving safe and sound. Of course if your goodies don't arrive, or if you are in any way unsatisfied, I would consider it a privilege to rectify the situation to your satisfaction.

I'm unable to mix different candies within a single box and cannot ship outside the contiguous 48 United States. Because of the relatively fragile, meltable nature of my confections, I accept orders only from October 1st through April 1st of each year. Winter holiday orders must be received not later than December 10th. Valentine's Day orders must be received not later than February 1st.

If you want your order shipped to multiple addresses, please place a separate order for each address; the additional charge for extra boxes is only in effect when all the boxes are being shipped to a single address.
