Putting The Science Into Chilli Sauce Production

Professor Pods is a small, family run business that grows exotic chilies and produces artisan chilli sauces and chutneys. From seed to sauce, we do it all! How did this new company come into being? Read on…

I’ve been a lifelong fan of spicy food, eating my first Indian curry at aged just 2! I've grown chillies for decades as a hobby. What began as a journey into chilli horticulture soon became a passion for growing weird and wacky varieties. The more exotic the chillies I grew, the more I appreciated the complexity and diversity of their flavours.

Previously, I was a university academic – going all the way from student through to a group leader and university lecturer. I enjoyed a successful career at this but fancied a change of lifestyle. Given my passion for all things chilli, I decided to try chilli farming and making my own artisan produce. From this, Professor Pods was born!! The company name is a nod to my scientific background, and the rigorous and scientific way that our chilli peppers are grown, and our sauces developed and then produced.

The vast majority of the chillies we use for our produce are grown by us. Whilst this is challenging in South West Scotland, the extended ripening needed in our 'fair' climate yields chilli pods with an outstanding complexity of flavour.

The philosophy of Professor Pods is simple. We aim to grow varieties that are rare, exotic or not normally offered in the chilli arena, giving customers the opportunity to try something genuinely different. A particular specialty of ours is varietal chilli sauces - where the primary reason for buying a given sauce is the unique flavour offered by that particular chilli.

We do not, and will not, compromise on quality. Our primary focus is flavour, rather than heat for its own sake. For this reason, we use very high concentrations of chilli in our sauces, as this gives the best, unadulterated flavour. We do not 'cut' our varietal sauces with a lesser/cheaper chilli to bulk out our sauce. We could also use less chilli, and stretch our profits, but the sauce wouldn’t be as good, so no to that! We could sell smaller bottles, again to stretch profits, but we think you’ll appreciate our 'bigger bottle' sauces, which we only sell in volumes of 155 ml.

Our range spans the mildest to the hottest chillies, and we have something to suit every palate. Professor Pods sauces are perfect as everyday condiments, for cooking with (as a direct substitute for fresh chillies), or for use in marinades, dips, mustards, salad dressings, salsas, curries, stir-fries etc.

Can you tell me more about your shipping and insurance policies?

We will always try to package goods so they transport safely. However, we cannot accept responsibility for any damage/loss to goods that happens after we've passed them on to Royal Mail.

For this reason, we will ship customers orders using postal services that include insurance that covers the full value of the goods, in case of damage or loss. We will always keep proof of postage records.

For 1 to 3 bottles of sauces we will typically ship using 2nd Class Royal Mail, which insures goods to a maxiumum value of £20. For larger orders (e.g. 4-6 bottles) we will ship using Royal Mail 2nd class 'signed for' delivery, which insures goods to a maximum value of £50.

Can I return sauces?

Yes, providing they are unopened, unused and in original condition. We cannot accept returns unless the tamper-proof seals fitted to bottles/lids are original and intact. That way, we know the sauce is in its original condition and unopened.

Refunds will be appropriately processed once goods have been received at our end, and verified to be in original, unopened, condition.

Can you tell me about allergens in these products?

Each bottle label is fully compliant with the required allergen information. Please check labels before using or consuming our sauces.

Below is some useful information on our ingredients, preservatives and the potential allergens that our sauces may be exposed to when they are hand produced by us.

Here is a list of ingredients and preservatives used in our sauces -

Ingredients: water, chilli, white vinegar (distilled from malted barley, which is a potential allergen), onion, salt, garlic, rapeseed oil.

Preservatives: ascorbic acid (E300), citric acid (E330).

Our sauces are made in a facility that routinely handles milk, egg, soya, mustard, peanut, sesame & nut products.

Can you tell me about the shelf life of your products?

Our artisan chilli sauces are all hand made in small batches. These sauces are marked with a 'best before' date that is 9 months after the date of manufacture. We will always try to ship products with the longest shelf-life from those available in our stocks. Typically, we aim to supply products that, on the day of dispatch, have between 4 to 8 months left until the 'best before' date. We will never ship products with less than 2 months to the 'best before' date. If you are interested in the shelf lives of specific products, or wish to store them for a considerable time prior to opening them, please contact us before ordering. That way we can confirm their best before dates and thus ensure our products meet your storage/usage requirements.
