Etsy, do you wanna be Craftster or a handmade (and others) Sales site?

You can't be both.
Teaching workshops for what other sellers sell indicates you want to be Craftster. No problem with that, but WHY would any of us want to use you as a venue if you teach what we do and try to live selling to thousands of others?
Just curious here, because why should I (for example) list my jewelry here if you will teach all the potential buyers how to make them themselves?
(I love Etsy as a venue - - I am not keen on Etsy creating more competition for its sellers)....

When people come to Etsy they should not be taught how to make what is selling here. These two things don't mix.

Etsy needs to focus on making the selling part of the site the best it can be before diverting time, money and energy into other areas.
The phrase "jack of all trades, master of none" comes to mind.

Shaking in my boots after posting this because I hope I don't tick off anyone high enough up to punish me...
But why would a VENUE share techniques their sellers use? I can't make sense of this.

just because you show a technique to someone doesn't mean they will be any good at it. I don't have a problem with it.
