I want to tell you a story. I made my own sourdough starter once, and after 6 months, my bread was still tacky and the bubbles were small and tight. I kept thinking 'nahhh a starter is a starter, so it surely makes no difference if it's newly made or decades old- I mean, it's just flour and water, right?!'
