This authentic, handmade French Butter Dish is a must in every household. It keeps butter fresh and spreadable on the counter for weeks.

How it works? The crock has two parts: a base that holds water, and a cup to hold the packed salted butter (use salted water for unsalted or low-salt butter) which also serves as a lid. The water creates an airtight seal that keeps the air away from the butter (oxygen is what turns butter rancid) so that refrigeration is not needed, and the butter can be used in its soft form. This method will keep butter for around a month provided it is kept at temperature below 80 F (27 C) and the water is changed regularly (3-4 days).

If you live in a hot climate, you may want to put some crushed ice into the water to lower the temperature. Water in the base pot should be high enough to cover the holes on the side of the butter cup. Another function of the holes is to allow water enter the butter cup when the level of butter is low.
