Urbain Dubois is the greatest French cook of the end of the 19th century. After an exemplary career where he officiates in the most famous Parisian restaurants, with the European aristocracy like Rothschild or Prince Orlov, he will end his career as the private cook of Emperor William I. He will build the foundations of modern cuisine both through his recipes and by bringing innovations to the service, he will establish the Russian service.
Author of several gastronomic treatises with his longtime collaborator Émile Bernard, including " La cuisine classique " which deals with all aspects of period gastronomy.
