SamuraiKitchen – Vintage Japanese Knives, Tools & Natural Whetstones
SamuraiKitchen is a Melbourne-based shop specialising in authentic vintage Japanese chef knives and traditional natural whetstones. What began as a lockdown hobby during the COVID years grew into a passion for collecting, restoring, polishing, and sharpening hand-forged Japanese knives using natural Japanese stones.
Many of these knives were originally made by small, local blacksmiths — often family-run workshops that have passed down their skills for generations. In Japan, a good kitchen knife was more than just a tool. It was something practical, durable, and personal, sometimes given from mother to daughter as she began her own household.
I focus on sourcing knives with clear signs of hand-forged production and honest wear from use. Some are new-old-stock, never used but stored for decades. Others are carefully restored, polished, and sharpened. I place particular emphasis on traditional finishes, such as the soft, misty *kasumi* polish created with natural stones.
Working with these tools is also a small step away from the culture of disposability that surrounds most modern products. A well-made knife, properly maintained, can last for generations. The same is true of the natural stones used to care for it.
Sharpening on natural stones is a tactile, skill-based process. It engages your hands, your hearing, and your attention. For many people, it becomes a quiet, satisfying ritual — a simple craft that fits naturally into the rhythm of cooking and daily life.
