Nutritional Profile
Boasting 16 times more protein than common honey, our blue honey is a powerhouse of nutrition. Phycocyanin not only enhances the appearance and taste but also imbues the honey with healthful benefits, making it a truly paradisiacal choice.
Sensory description
The honey we currently use yields a final product that is light and floral, citrus-like, with a strong aroma and a liquid texture. What makes it so unique is the striking blue coloration.
How to Store It
Store this unique treasure at room temperature (higher than 14C, to prevent crystallization, but lower than 40C to prevent decolorization), away from direct sunlight to maintain its vibrant blue color and delicate flavors.
How to Use It
Blue honey is perfect for elevating meals, enriching breakfasts, or crafting the most special gifts. Avoid using it in hot beverages as phycocyanin is heat-sensitive, and its brilliant blue will fade with exposure to high temperatures. The color is more 'visible' on white backgrounds, such as yogurt or cheese, or with fruits, walnuts etc. Please, feel free to act creatively!
How It's Made
We act just like bees, selecting the most valuable compound of spirulina, to add it to our product. At It’s Alive, we've mastered the superior method of extracting analytical grade phycocyanin from fresh spirulina, offering the purest blue nature can provide. This pigment, known for its antioxidant, anti-inflammatory, and anticancer properties, is meticulously blended with the finest Greek honeys, creating a honey that's not only nutritious but breathtakingly beautiful.
How Long Does It Last
Our blue honey is best enjoyed within 3 years. Due to the natural tendencies of orange blossom honey to crystallize, a bain-marie might be needed to maintain smooth consistency. Warm the honey carefully, ensuring the temperature remains below 40°C (104°F) to preserve the color and properties of phycocyanin.
A Note on Purity
The purity of phycocyanin in our honey is unmatched. We use only analytical grade phycocyanin, the highest purity available, known for its stunning blue color without the greenish-petrol hue found in less pure extracts. This way, we aim to pass the message: nothing beats fresh, alive spirulina. Our fresh spirulina retains all the super-sensitive and ultra-valuable compounds intact.
Sustainability
We produce spirulina in the most efficient photobioreactors, which we developed over years of scientific experimentation. We capitalize on the thermal insulation of our top-tier laboratory. We carefully selected all materials in a way to make sure that the production has no heavy metals. We incorporate solar heating, passive cooling, and the most efficient artificial lights system to grow spirulina as efficiently as possible in an urban environment.
We further select the best honey from Greece, to add the best blue color possible. We buy the honey directly from the honey producers in a very good price, helping them to take care of their bees with higher interest. Supporting beekeepers directly contributes to healthier bee populations and the pollination of plants, in one of the richest in biodiversity hotspots of the world: Greece.
The role of phycocyanin in spirulina
Phycocyanin is found on the walls of spirulina's cells, forming a block with other proteins, such as allophycocyanin and phycoerythrin. These 3 proteins work together to expand the photosynthetic efficiency of spirulina, allowing it to capture a broader range of radiation. Phycocyanin absorbs orange light radiation, playing a crucial role as an energy and protein reserve. Whenever spirulina feels hungry, it can consume its own phycocyanin to help it stay alive.

Q&A:
- Why you use such a bottle, I cannot put the spoon inside it..
- An inside joke we use is the following: we don't put spoons inside the paradise. The flowability of our product is great, if kept in a lukewarm environment (over 14C), so you don't need a spoon to get it out of the bottle. This way we protect the content from bad habits and we minimize contamination risks.
- Will the color stay forever?
- Phycocyanin is a super-sensitive protein. As an antioxidant it tends to get easily oxidised. As a protein, it is sensitive to UV radiation. While honey helps to preserve it, the user needs to keep it in a dark and lukewarm place. We don't have enough experience yet, as to how long it can stay so vivid, but good practices prolong its color.
- What type of honey do you use?
- We are currently using orange blossom honey from the Euboea Island, the second biggest island of Greece. Orange blossom honey is one of the most easily crystallized ones. Crystallization does not mean that the honey is spoiled, it proves that it is natural. However, bain-marie might be needed after a few months. Please, again, take care of the temperature, do not exceed 40C
- Why does the bottle look purple?
- This is a natural phenomenon. The content is absolutely blue, however, due to the big diameter, the light scatters in a way to create this delusion that the product is purple.
