This is raw honeycomb straight from the beehive. These jars are particularly unique because the bees have placed the honey inside the comb, directly into the jar. We put empty pint jars into the beehive, allowing the bees to fly up inside the jars and build the honeycomb directly into the jar. When the comb is built, the bees then fill it with honey. No two jars are the same, and the honey and the comb has never been touched by human hands. The delicate wax can be eaten – spread on toast, biscuits, fruit, sandwiches – or eat it plain, as a wholesome candy. We only have 2 jars left of this kind of honeycomb, and when it is sold out we will not have any more until late 2013. It would make a unique gift and conversation piece, as well as a wonderful "honey tasting" for your dinner party.
These jars were harvested at the end of the Summer in 2012, so the flavor of the honey will most resemble our Summer Harvest honey. It contains nectar from Canadian thistle, clover, and wild blackberries. A delicate flavor that is sprightly sweet, yet mild.
Honeyrun Farm produces pure, raw honey from Williamsport, Ohio. Our honey is never pasteurized or high-pressure filtered, so it retains all the vitamins, minerals, enzymes, and antibacterial properties that raw honey is known for. All raw honey (honey fresh from the beehive) will granulate (get cloudy and thick) in time. This is natural, and does not mean the honey has "gone bad", as honey does not spoil.
We are a small family farm and are committed to using no chemicals in our beehives. We harvest our honey seasonally – Spring, Summer, and Fall – to bring out the distinct floral flavors and aromas that are representative of Central Ohio wildflowers.
