We followed the olive grains on our trees day by day, which we have maintained in the best possible way since planting. Since the yield of our olives was good this year, the olive grains were oiled later than we expected and they were still greener in mid-October. The more we got excited about the harvest, the more they became complacent.

In this exciting pursuit, before the nutritional values ​​are lost, that is, before our olives turn from green to purple; When all the conditions for the Early Harvest were met, we said let's start and started harvesting.

We brought these olives, which we collected by hand, to olive oil pressing unit on our village farm, without letting them wait in the field, and started pressing them immediately. Our boutique production enables us to be this sensitive.
