JAMS are amazingly versatile. You can use them to top ice cream, yogurt, cheesecakes, oatmeal, pancakes, or waffles. For a quick appetizer, pour a jar over a block of cream cheese, or top a water cracker with a smear of jam and crown it with a slice of gourmet cheese. You can thin a jam by warming it in the microwave and then use it as a glaze for a baked ham. Bourbon Cherry glaze on a pork loin, Bourbon Apple Butter tops a sweet potato nicely.

I offer a wide variety of fresh items in 4-ounce jars. All flavors are handcrafted in small batches. Each flavor is available in limited quantities. I purchase fresh fruits as they are in season. I use Pomona’s Pectin whenever possible. This allows me to use less sugar to pack the recipe with more fruit. Jellies are transparent without any fruit pieces. Jams are set like jello and have fruit in them. Butters are made by cooking fruit to thicken it and then season with spices. Butters never set. They are soft and spreadable. Jams have a 12-18 months shelf-life stored in a cool dark place. Once opened, refrigerate, and they will keep in the fridge for approximately 6-8 weeks.
