You already love artichokes. This European heirloom is extra early, so you can start enjoying baby chokes in early summer before the silver plants are ready.

Violet de Provence is gorgeous in the garden. It produces pretty chokes with delicious chunky petals. The plants are robust and extra productive, even in marginal landscaping situations. They need rich, well-drained soil, full sun, a temperate climate and plenty of room. Plants grow to 4' tall and as wide, spectacular silvery sculptures that come back year after year.

If you love artichokes, grow both purple and silver varieties to provide an uninterrupted supply. Baby chokes are wonderful in garlic butter, and if a few grow too big, let them bloom. They make spectacular cut flowers. 85 days. Non GMO. Hardy in zones 7 to 9.
