What is a sourdough aliquot jar?
I never quite understood recipes for sourdough baking that said 50% bulkrise. I see the dough rise, but have trouble estimating how much.
Then I learned about bakers using an aliquot (also called side car, spy glass, jar spy and sourdough jar), which just means they 𝐭𝐚𝐤𝐞 𝐚 𝐬𝐦𝐚𝐥𝐥 𝐩𝐨𝐫𝐭𝐢𝐨𝐧 𝐨𝐟 𝐝𝐨𝐮𝐠𝐡 𝐚𝐧𝐝 𝐩𝐮𝐭 𝐢𝐭 𝐢𝐧 𝐚 𝐬𝐦𝐚𝐥𝐥 𝐣𝐚𝐫. 𝐍𝐨𝐰 𝐲𝐨𝐮 𝐜𝐚𝐧 𝐰𝐚𝐭𝐜𝐡 𝐭𝐡𝐞 𝐝𝐨𝐮𝐠𝐡 𝐫𝐢𝐬𝐞 𝐢𝐧 𝐭𝐡𝐞 𝐣𝐚𝐫.
It helps to see what the dough is doing, this helps to be more intuitive about the dough. You can perhaps skip or add a fold depending on the rise of the dough. And you are more able to stretch the bulkrise in pursuit of those glorious bubbles and crumb.
You can pump the dough inside the sourdough aliquot jar, which gives as little air bubbles as possible. Easy readings of percentages on the outside and the tube cleaner makes it easy to get the dough out of the aliquot and get it clean again for next use.
