Cappings Honey is a blend of Summer honeys from multiple locations in North New Jersey. The harvest is from beehives located in Bergen, Essex, Passaic, and Morris counties.

2024 Harvest Notes: The bees experienced a nearly perfect mild and moist Spring and Summer. The colonies grew quickly and most reached ideal strength as the main nectar flow started. The color variation was not as variable as in previous years. This year, golden orange predominated. Overall, it was a fine year for the bees and the beekeeper.

Cappings honey is collected as it drains off the virgin beeswax covering the new honey. The cappings must be sliced off so the honey can be spun out of the comb. The resulting honey carries a stronger beeswax and propolis bouquet. It is traditionally preferred for homemade mead.

This honey is packaged in 12 ounce plastic jars.

Please bear in mind that real honey granulates. Honey slowly crystallizes as it is exposed to fall and winter temperatures. Some prefer the candied nature of crystallized honey. It is easier and less messy to measure out.
