This organic starter culture is used to make a special type of sourdough bread that's sweeter, not quite as sour, and has a finer, softer crumb texture than traditional sourdough. Potato flake sourdough starters are perfect for sandwich bread loaves, dinner rolls, steamed buns, cinnamon rolls, flavored breads, batter-based recipes, and many other uses. Whole wheat also works very well, resulting in a flavor and texture just as delicious as recipes using white flour. Since the starter itself is maintained only on potato flakes, sugar and water, it can easily be used in gluten-free (GF) preparations if desired.

Unlike dried flour-based sourdough starters, this potato flake starter can be activated in one easy step, and can then be maintained or used immediately for baking the 2nd day.

The potato flake version of sourdough starters is notably easier to use and maintain than traditional sourdough, and provides extremely consistent baking results, including in challenging climates. Several portions of our starter have been given out to friends new to bread baking, and they've had great success. It makes a wonderful gift for beginners, due to its robustness and simplicity, and for seasoned bakers wanting more diversity in their starter collections.

This particular culture was received by our family in Texas 50 years ago from a source in Oklahoma that was already around 100 years old (circa late 1800s). We've been using this starter to create delicious home-baked bread for three generations.
