Eddoe is a a tropical vegetable closely related to taro. It is cultivated for its thickened stems (corms) and young leaves. Neither the young leaves nor the corms can be eaten raw. They must be cooked carefully before it can be eaten safely.
Eddoes are used extensively in the Caribbean. This may be because of he historical presence of the Igbo people from Africa. It has also been suggested that eddoe was developed as a crop in China and Japan and it was introduced to the West Indies from there. Regardless of its origin, today eddoe is enjoyed in much of the world including the Caribbean, much of south America, Africa, China, and Japan and India.
Eddoe can be boiled, baked, or fried. Its versatility allows it to be used in a variety of dishes, from soups to stews to side dishes. Use it like a potato. It has a nutty taste and is rich in fiber, vitamins, and antioxidants. In the Caribbean dishes like callaloo and pepper pot often feature eddoe as a main component.
Eddoe takes 8-12 months to mature in tropical climates. Plants can be grown by planting an entire corm or by cutting a corm into pieces that contain at least one eye. They grow best in rich loam soil with good drainage, but they can be grown in poorer soil, in drier climates, and in cooler temperatures than than other members of the Colocasia family.

I grew up eating this Taro, and I can tell that this ones are fresh. I quickly cut the top off for planting, and cooked the rest. It tasted just like back in my old country home. Highly recommended. I also weigh it just to make sure that it was 1 pound, but the seller gave a little bit more than 1 pound. Highly recommended!
Only complaint is it took 10 days to arrive, but great product!
