Black (heat transformed, sometimes called "fermented" or aged) garlic is a delicacy to complement steak, salad or any other meal. In addition to its known culinary application, the black garlic is also a valuable medicine, thanks to the antioxidants, called polyphenols.
Most interestingly, black garlic has been found to contain an increased level of polyphenols compared to raw garlic, as the composition and amount of them go through a change with the thermal transformation ("fermentation") of garlic bulbs.
The black cloves become much softer comparing them to the non-fermented white regular garlic cloves.
Black garlic has a sweet taste with very slight pungency and a hint of, perhaps, a fig. Use it as your food or your medicine -- the benefits are terrific. It is an excellent way to support the wellness of your heart and blood vessels and maintain healthy cholesterol levels.
We typically do not peel the garlic to preserve it's natural softness. Packaged in quantities of 2 or 3 heads per package. The average weight of 2 heads is 1 oz (30 grams). One garlic head usually contains 6-8 cloves.
