The kiridashi can be thought of as a stripped down pocket knife. It's a traditional Japanese design that is compact and rugged. Dashi's have a variety of uses such as: carving, cutting cord, opening boxes, light prying, gardening, removing splinters, etc. Basically its the ultimate utility knife with style. Simple and highly functional.

They measure roughly 4" from tip to tail with a cutting edge just under 2" long.

These dashis are recycled from old files, which are known to knife makers as being made out of some the best steel in the world, often 1095 or W1. These steels are highly durable, easy to sharpen, and will maintain their edge longer than many other blade steels. Since the steel is recycled, it may have some scratches or pitting from previous lives. While they do get a little cleaned up, I do my best to retain the history of the file and preserve any scratches or other blemishes.

Each dashi is ground with an asymmetrical grind meaning the bevel is only on one side. This grind needs to be on the left side if you are left hand and the right side if you are right handed.
