Full Details:
- Angelica (Angelica archangelica): Viking green and one of the few plants documented across every layer of Norse record. In Fóstbrœðra saga, Thorgeir literally hangs from an angelica stalk when the ground collapses beneath him. In Óláfs Saga Tryggvasonar, its hollow stem is used as a tool of execution. Outside the sagas, angelica was a practical food source: leaves and stems were eaten raw or cooked, especially in northern regions where few greens survived the climate. The plant grows tall, with thick, hollow stalks and large green umbels, and its flavor sits somewhere between earthy herb and mild licorice. The stems can also be candied for a Norse inspired treat. Seeds are short lived and should be refrigerated until sowing to ensure maximum viability.
- Nettle (Urtica dioica): Abundant, fast-growing Viking leafy green, edible despite its reputation. Once boiled or wilted by heat, it became a nutrient-dense green commonly cooked into soups and teas. In the Old English Herbarium, nettle is described as a plant that “fights against cold,” its reputation crossing both Norse and Anglo-Saxon lines. Vikings would've gathered it along rivers, fields, and settlement edges. Tall, serrated, and covered in fine stinging hairs, its cooked leaves have a refreshing, earthy spinach-like flavor. Deadheading flower clusters and occasional trimming keeps nettle compact and prevents spreading/excess self-seeding. (Always handle raw with gloves)
- Cress (Lepidium sativum): Viking herb and one of the plants physically found in a Viking burial. Seeds were discovered in a small wooden box aboard the Oseberg ship, a high-status grave dating to the early ninth century. The plant grows quickly, is easy to cultivate, and delivers a sharp, peppery flavor that made it useful in areas with short growing seasons. Low-growing with fine leaves, it matures fast and fades quickly, which aligns with its role in the Viking North.
