In the 1790s, Quakers and other abolitionists in the American northeast launched a campaign to replace cane sugar — produced by enslaved labor in the Caribbean — with maple sugar tapped from the Acer saccharum. Benjamin Rush wrote pamphlets. Thomas Jefferson, of all people, planted maple groves at Monticello. The marketing was sharp: "free sugar," "sugar untainted by blood." The market was sharper: cane was cheaper, and the experiment quietly collapsed. The tree itself remained, and now produces a polite breakfast condiment. This print belongs in any kitchen where the syrup is appreciated and the history is not skipped.
