Known today as mâche or lamb’s lettuce, corn salad is an exceptionally cold-hardy green that early botanists originally grouped alongside lettuces under the Latin name Lactuca agnina. In medieval and Tudor England, it was a familiar sight growing wild in cultivated ground and grain fields, where it was gathered as a source of fresh sustenance even throughout the colder months. The renowned English botanist John Gerard referred to the plant as “Loblollie,” praising it as an excellent winter salad herb. He also provided a fascinating glimpse into its agricultural history, documenting how the arrival of Dutch and French immigrants helped transition this humble, wild-foraged field plant into deliberate garden cultivation across England.

Producing a low-growing, compact rosette of tender, spoon-shaped leaves, this Dutch Broad Leaved variety is prized for its larger foliage and cold tolerance.
