Known as cerfolium in medieval Latin and fille in Old English, chervil is an elegant herb with a history stretching back to Emperor Charlemagne’s royal estate gardens. It held a revered place in early European folklore and daily life. The mysterious Old English Nine Herbs Charm praises its presence alongside fennel, declaring: “Chervil and fennel, a very mighty two; these worts the wise Lord shaped” (Fille and finule, felamihtigu twa, þa wyrte gesceop witig drihten). Another entry from the same 10th-century Lacnunga instructs: “For a wen salve; take helenium and radish and chervil and ravens foot...”. By the late 14th century, the 1393 French guidebook Le Ménagier de Paris explicitly details its use in medieval cookery: “To make a tart, take four handfuls of beet leaves, two handfuls of parsley, one handful of chervil.”
