Highlights
Known traditionally as “Viper’s Grass” due to an early belief that it could cure snakebites, black salsify holds a rare and prestigious place in horticultural history. It belongs to the greater salsify tradition alongside the familiar pale-rooted Goat’s Beard, whose long, tender roots were highly prized for their delicate flavor. The renowned Elizabethan botanist John Gerard praised the roots of salsify when boiled and buttered, claiming they were “in delicate taste far surpassing either Parsnip or Carrot.” Although black salsify was less common in England during this era, Gerard recorded Scorzonera separately and explicitly listed “Scorzonera, Vipers grasse” among the plants growing in his own famed London garden between 1596 and 1599. Closely resembling traditional salsify in its culinary use and refined flavor, it served as its darker, more exotic continental counterpart, offering a far more dramatic visual presence while proving noticeably easier to cultivate.
Producing a long, slender taproot, this resilient cool-season crop yields a dramatic black skin that contrasts beautifully with the rich white flesh within. Above ground, the plant forms tall stems topped with bright, yellow flowers that attract numerous beneficial pollinators. Fully edible and prized for its gourmet quality, the peeled roots deliver a complex, earthy flavor often compared to artichoke hearts or delicate oysters. They are exceptional when boiled, roasted, or pan-fried with a simple coating of butter and traditional herbs. The tender shoots can also be harvested and cooked like endives. Highly cold-hardy, the roots can be left in the soil through the fall and winter, allowing their flavor to sweeten in the cold and providing a luxurious, reliable harvest even when the rest of the garden is dormant.
Each packet contains approximately 80 non-GMO, open pollinated Scorzonera hispanica seeds.
