Tomatillos are a staple Mexican cuisine and a Key ingredient in salsas and Chili Verde
Great served fresh, grilled or cooked in a variety of dishes
You need 2 or more plants placed close together for cross pollination
The Tomatillo plant is of the nightshade family, related to the cape gooseberry, bearing small, spherical and green or green-purple fruits. Tomatillos originated in Mexico, and are a staple of that country's cuisine. Dainty paper husks encase the Tomatillos, and by late summer, what seems like hundreds of fruits will dangle from the plant's branches, ensuring that you can satisfy your green salsa cravings by summer's end.

As the fruit matures it fills the paper husk that encloses it, then the husk turns brown and splits open by harvest time, showing the green fruit inside. Tomatillos are the key ingredient in fresh and cooked Mexican and Latin American dishes. In fact, the essential ingredient in the green salsas of Mexican Cuisine is not the tomato but the Tomatillo.

It has a tart yet sweet citrusy flavor that is great served fresh in salsas like the Chili Verde, but it can also be grilled, mixed into chili and stews or preserved in jams and jellies. Place plants 24 inches apart in a sunny location. You will need 2 or more plants placed closely together for cross pollination else your plants will not bear fruit.

They require a rich well-draining soil with frequent watering. Like the tomato plants, plant to a soil depth just beneath the first set of leaves. That first set of leaves (called cotyledon-which means the embryonic first leaves) will eventually fall off.

Roots will form along the buried stem, establishing a stronger root, thus a stronger plant. Don't water too late in the evening. You want the plants to dry thoroughly before night. These plants will grow 3-4 feet tall so cages or fencing is needed for support.

Remove fruits from the plant when husks turn tan and split open and the fruits inside are firm. If frost is expected, remove the entire plant and hang it upside down in a sheltered location to ripen the remaining fruits. Like tomatoes, they will continue to ripen after harvest. A slow growing plant, harvest is 90-100 days after seeding.

Plants will be shipped UPS. We will watch the weather to see if shipping to your area is viable. Temps in the 20's and low 30's aren't good for live plants. If you order, we will ship quickly or be in touch. Shipping to continental US only.
