Café con Leche Rolled Cookie Recipe

Cafe con Leche or a latte is espresso coffee with steamed or boiled milk. This recipe embodies just that - a warm cup of coffee with milk. Please note that I tested this recipe too many times to keep track and no matter what I adjusted, they spread a smidgen. Please refer to the listing pictures.

I have taken the adventure of making no chill recipes that use cold, straight from the fridge ingredients, and have zero spread without sacrificing flavor nor texture. This recipe is a no chill recipe, after rolling, before cutting, or prior to baking. The only "chilling" this recipe has is a resting period after its mixed so the flour can hydrate - yielding cookies that will bake and brown more evenly.

Icing pairing: normally, we flavor the icing to compliment the cookie flavor. My cookies are so flavorful that they don't need much added on them. I've discovered that a simple vanilla icing or the mixture of vanilla/almond/lemon (sounds weird but it works - I learned this from Haniela) will pair perfectly with the cookie, without competing or taking away from it. Should you want to add an extra layer of flavor, I believe that chocolate, vanilla, cinnamon, caramel, maple flavoring would work well also.
