An essential ingredient in Korean cooking, gochugaru is crushed dried chili peppers that have been de-seeded. Gochugaru’s flavor profile is more complex than the crushed red pepper flakes that you might find in your neighborhood grocer’s spice aisle. Those flakes are typically made with cayenne pepper which adds heat but not much flavor. The dried peppers used in gochugaru are fruitier and bring a touch of smokiness. I've started substituting gochugaru for most recipes, from Mexican Fajitas to pasta, that call for red pepper flake to add an additional depth and richness to the dish. Gochugaru also breaks down nicely when cooked so you don't get a bunch of seeds in your dish. Whether you're making traditional kimchi or sprinkling it on your pizza, gochugaru is a great way to add a bit of kick along with a lot of flavor!
